Strawberry Shortcake Poke Cake (Moist, Creamy & Crowd-Pleasing)

Introduction

Strawberry Shortcake Poke Cake is a soft, moist, and irresistibly creamy dessert that takes the classic flavors of strawberry shortcake and transforms them into an easy, crowd-pleasing cake. With a light vanilla cake base, juicy strawberry filling soaked into every bite, and a fluffy whipped topping, this dessert delivers maximum flavor with minimal effort.

What makes poke cakes so special is the texture. By poking holes into the warm cake and pouring a flavorful filling over the top, you allow moisture and sweetness to seep deep into the cake. The result is a dessert that stays tender for days and tastes better with time. In this version, sweet strawberries and cream create a nostalgic flavor that’s loved by all ages.

Strawberry Shortcake Poke Cake is perfect for potlucks, birthdays, BBQs, holidays, and family gatherings. It’s simple enough for beginners, yet impressive enough to earn compliments every time. Best of all, it can be made ahead, making it ideal for busy schedules and stress-free entertaining.

If you’re looking for a dessert that’s light, refreshing, and guaranteed to disappear fast, this strawberry shortcake poke cake is the one to make.

Ingredients
Cake Base

1 box vanilla or white cake mix

Ingredients listed on the cake mix box (eggs, oil, water)

Strawberry Filling

1 (3 oz) box strawberry gelatin

1 cup boiling water

1 cup fresh strawberries, finely diced

Topping

8 oz whipped topping (Cool Whip), thawed

1 cup fresh strawberries, sliced

Crushed vanilla wafer cookies or shortbread crumbs (optional)

Preparation
Step 1: Bake the Cake

Prepare and bake the cake according to package directions in a 9×13-inch baking dish. Once baked, remove from the oven and allow it to cool for about 10 minutes.

Step 2: Poke the Cake

Using the handle of a wooden spoon or a straw, poke holes evenly all over the cake, spacing them about 1 inch apart. Be sure to poke all the way to the bottom.

Step 3: Prepare the Strawberry Filling

In a bowl, dissolve the strawberry gelatin in boiling water, stirring until fully dissolved. Stir in the finely diced fresh strawberries.

Step 4: Fill the Cake

Slowly pour the strawberry mixture over the cake, allowing it to seep into the holes. Spread evenly across the surface. Refrigerate the cake for at least 2 hours to allow it to set.

Step 5: Add the Topping

Once the cake is chilled and set, spread whipped topping evenly over the top. Garnish with sliced strawberries and optional crushed cookies. Chill until ready to serve.

Variations

Cream Cheese Topping: Mix softened cream cheese with powdered sugar and fold into whipped topping.

Chocolate Strawberry Poke Cake: Use chocolate cake instead of vanilla.

Strawberry Lemon Version: Add lemon zest to the cake batter.

Fresh Strawberry Purée: Replace gelatin with sweetened strawberry purée for a more natural version.

Mini Poke Cakes: Make individual poke cakes in cupcake liners.

Cooking Notes

Poke holes while the cake is still warm for best absorption.

Chill thoroughly so the filling sets properly.

Use ripe strawberries for the best flavor.

Spread topping gently to avoid disturbing the filling.

Serving Suggestions

Serve Strawberry Shortcake Poke Cake chilled for the best texture. It pairs perfectly with coffee, iced tea, or lemonade. This cake is ideal for summer gatherings, holidays, potlucks, and birthday celebrations. Slice into generous squares and garnish just before serving for a fresh, vibrant look.
