Southern Caramel Cake
Ingredients
For the cake
-
2½ cups all-purpose flour
-
2 tsp baking powder
-
½ tsp salt
-
1 cup unsalted butter, softened
-
2 cups granulated sugar
-
4 large eggs, room temperature
-
1 cup whole milk
-
2 tsp vanilla extract
For the caramel icing (this is the star)
-
2 cups granulated sugar
-
½ cup water
-
½ cup unsalted butter
-
1 cup heavy cream, warm
-
1 tsp vanilla extract
-
Pinch of salt
Instructions
Make the cake
-
Preheat oven to 350°F (175°C). Grease and flour two or three 9-inch round pans.
-
In a bowl, whisk flour, baking powder, and salt.
-
Cream butter and sugar until light and fluffy (don’t rush this—Southern cakes love patience).
-
Add eggs one at a time, beating well after each.
-
Mix in vanilla.
-
Alternate adding dry ingredients and milk, starting and ending with dry.
-
Divide batter evenly and bake 25–30 minutes, until a toothpick comes out clean.
-
Cool completely before icing.
Make the caramel icing
-
In a heavy saucepan, combine sugar and water over medium heat.
-
Do not stir—just let it cook until it turns a deep amber color (watch closely!).
-
Carefully add butter (it will bubble), then slowly pour in warm cream while stirring.
-
Reduce heat and cook, stirring, until thick and smooth—about 5–7 minutes.
-
Remove from heat, add vanilla and salt. Let it cool slightly until spreadable.
Assemble
-
Spread warm caramel icing between cake layers, then over the top and sides.
-
Work quickly—the icing thickens and sets as it cools (that’s the Southern magic).
Tips (very important 😌)
-
If the icing hardens too fast, gently reheat it.
-
The cake tastes even better the next day.
-
Slight imperfections are normal—Southern caramel cakes are about flavor, not perfection
