Southern Caramel Cake Recipe

Southern Caramel Cake

Ingredients

For the cake

  • 2½ cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 2 cups granulated sugar

  • 4 large eggs, room temperature

  • 1 cup whole milk

  • 2 tsp vanilla extract

For the caramel icing (this is the star)

  • 2 cups granulated sugar

  • ½ cup water

  • ½ cup unsalted butter

  • 1 cup heavy cream, warm

  • 1 tsp vanilla extract

  • Pinch of salt


Instructions

Make the cake

  1. Preheat oven to 350°F (175°C). Grease and flour two or three 9-inch round pans.

  2. In a bowl, whisk flour, baking powder, and salt.

  3. Cream butter and sugar until light and fluffy (don’t rush this—Southern cakes love patience).

  4. Add eggs one at a time, beating well after each.

  5. Mix in vanilla.

  6. Alternate adding dry ingredients and milk, starting and ending with dry.

  7. Divide batter evenly and bake 25–30 minutes, until a toothpick comes out clean.

  8. Cool completely before icing.


Make the caramel icing

  1. In a heavy saucepan, combine sugar and water over medium heat.

  2. Do not stir—just let it cook until it turns a deep amber color (watch closely!).

  3. Carefully add butter (it will bubble), then slowly pour in warm cream while stirring.

  4. Reduce heat and cook, stirring, until thick and smooth—about 5–7 minutes.

  5. Remove from heat, add vanilla and salt. Let it cool slightly until spreadable.


Assemble

  • Spread warm caramel icing between cake layers, then over the top and sides.

  • Work quickly—the icing thickens and sets as it cools (that’s the Southern magic).


Tips (very important 😌)

  • If the icing hardens too fast, gently reheat it.

  • The cake tastes even better the next day.

  • Slight imperfections are normal—Southern caramel cakes are about flavor, not perfection
