Slow-Cooked Whole Chicken

  1. Rub olive oil or butter all over the chicken (top, bottom, sides).

  2. Sprinkle the spice mix generously:

    • On the skin

    • Inside the cavity

    • Under the skin (very important!)

👉 To season under the skin:

  • Gently loosen the skin over the breast using your fingers.

  • Carefully push some spice mixture underneath.

  • This makes the meat very flavorful.

  1. Place 2–3 lemon slices and a little garlic inside the cavity.


🔹 STEP 4: Prepare the Slow Cooker Base

  1. Add chopped onions to the bottom of the slow cooker.

  2. Add garlic.

  3. Add carrots and potatoes.

  4. Pour 1 cup broth or water over the vegetables.

👉 The vegetables act as a rack so the chicken doesn’t sit in too much liquid.


🔹 STEP 5: Place the Chicken

  1. Put the chicken breast-side up on top of the vegetables.

  2. Place remaining lemon slices on top.

  3. Cover with the lid.


🔹 STEP 6: Slow Cooking Time

Choose ONE option:

  • ✅ LOW heat: 6–8 hours (best for tender results)

  • ✅ HIGH heat: 3–4 hours

Do NOT open the lid during cooking.
Opening releases heat and increases cooking time.


🔹 STEP 7: Check for Doneness

Chicken is ready when:

  • Internal temperature reaches 75°C (165°F) in the thickest part of the thigh.

  • Juices run clear (not pink).

  • Meat pulls easily from the bone.

If not ready, cook 30 more minutes and check again.


🔹 STEP 8: Rest the Chicken (Very Important!)

  1. Carefully remove the chicken from the slow cooker.

  2. Place on a tray.

  3. Let it rest for 15–20 minutes before cutting.

👉 Resting keeps the juices inside the meat.


🔹 OPTIONAL STEP 9: Make the Skin Crispy

Slow cookers don’t brown skin. For crispy skin:

  1. Preheat oven to 220°C (425°F).

  2. Transfer chicken to baking tray.

  3. Broil (grill) for 5–10 minutes.

  4. Watch carefully so it doesn’t burn.


🍽️ SERVING

  • Spoon cooked vegetables onto a serving plate.

  • Place chicken on top.

  • Garnish with chopped parsley or cilantro.

  • Serve with rice, bread, or salad.


💡 EXTRA TIPS FOR PERFECT RESULTS

✔ Do not add too much liquid — chicken releases its own juices.
✔ For extra flavor, add a bay leaf or thyme.
✔ For spicy version, add chili flakes.
✔ If sauce is thin, simmer liquid in a pan 5–10 minutes to thicken.
